June 12: Let's Choose Joy

Dear families,

When I was growing up, my parents moved our family to the island of Guam in the middle of the Pacific Ocean to become missionaries, and we lived there through my high school years. Guam is a special place full of joy - sunshine and friends and really good food.

This week, we're making Chamorro breakfast fried rice (recipe included below… the people of Guam are called Chamorro) and learning about the fruit of joy. Spam and eggs might not sound like something you would like, but you might find unexpected joy in this dish… I certainly do!

So I'm challenging our kids to find creative and thoughtful ways to share God's joy with others by savoring what is good even when things aren’t always great. We can choose joy!

chamorro breakfast fried rice

Recipe credit: Annie’s Chamorro Kitchen

Ingredients:

  • Medium-grained white rice

  • 1 pound of Spam (or bacon)

  • Snow peas (fresh, frozen, or canned)

  • Garlic

  • Green onion or scallions

  • 2–3 large eggs

  • Pepper

  • Soy sauce

  • Hot sauce (optional)

Method:

  1. Cook rice (either over the stovetop or in the microwave). In the meantime, prepare the other ingredients.

  2. Chop Spam into small cubes (0.5 inch), mince the garlic, and chop the onions.

  3. Cook Spam in a large skillet over medium-high heat until crisp. Stir in the garlic and onions, cook for 2 minutes. Add snow peas, cook for 2 more minutes.

  4. Stir in the cooked rice, a cup at a time, coating well with the grease. Cook and stir until the rice is hot.

  5. Create a circular well in the middle of your pan, pushing all the ingredients to the side. Then crack your eggs into the pan.

  6. Once they are scrambled, incorporate the eggs into the rest of the pan, then sprinkle liberally with soy sauce to taste.

  7. Serve right away with a scallions and hot sauce (if you want an extra kick), or refrigerate for a future meal.
